I messed up guys. I thought I could cure a bunch of zombie villagers at once, but forgot that the curing time is varied, so the first one to cure just gets rezombified by the others. How do I separate all these zombie villagers before they despawn? They have valuable trades!!
To speed up the process, you can put a bed or an iron bar around the villager. This will make the cure process faster, but it only has a 10% effect. Once you’ve cured the zombie villager, it will regenerate. This process isn’t permanent, so it will take a few minutes.
It's not only mobs despawning at random that is the issue although I have witnessed it happen a few times on my worlds, but even when name tagged and in a well lit and protected enclosure, sometimes mobs, even Villagers and tamed Wolves etc, automatically despawn, and for no apparent or good reason.

Do villagers despawn? I captured two zombie villagers, cured them and got them 3 beds inside a "breeding chamber" so that they won't escape. Best. Villagers dont despawn. They will want to breed if they think they are part of the iron farm village. Consider making your trading hall 64+ (?) blocks away without wood doors. Remember to baby-zombie-proof it, including social spawning. Lots of storage options, depends on how space efficient you want it.

This could be a problem with your computer. As @creulcat said, Please include more information in your question. Option 1: Please turn off your computer, leave it to cool off, turn it on, open Minecraft, comment if it worked. Option 2: If Option 1 didn't work, try this: Launch Minecraft with more RAM, comment if this worked.
Oh well, i though that zombie villagers are another kind Convert them immediately otherwise they will despawn like any other hostile mob. I'm assuming they trapped it to convert it so the simplest option is being prepared for that. Not all zombies will pick up items, it depends partly on difficulty level.
